Holy Goat is certified organic with NASAA, using milk from their our own herd of goats and are producing the pinnacle of goats cheese being made in Australia.
Holy Goats Bridget's Well is a matured lactic goats cheese ring. With a wrinkly ash covered rind which it obtains from addition of geotrichum moulds, It has a creamy texture and an incredible depth of flavour. When young Bridget's Well has a lower moisture content. Its creamy, citrus centre looses moisture as the cheese matures, becoming firmer and denser with a more concentrated curd and intensified flavours.
