This mild pancetta is made using traditional Italian medthods by Vince Papapndrea at his facility in Wetherill Park, Sydney. Using high quality Australian grown pork, the belly is rubbed with a salt an spice mix, then dry hung in a temperature controlled aging room to create a consistent, flavourful product. Use as a topping for pastas or as addition to salads or tarts, or to add depth of flavour to casseroles and soups.
