Based on 130 years of dairy craftsmanship in Pyengana Valley, Tasmania, this cloth bound cheddar cheese is highly regarded as one of the best cheddars in Australia. Using traditional techniques that the cheddar is meticulously handcrafted. After the curds are cooked and stirred by hand they are salted and hooped in cloth bags. The cheese is first pressed overnight then wrapped in muslin cloth to protect the surface, it is then sealed with lard to prevent the cheese from drying out too much during the maturation process. The Traditional Cloth Matured Cheddar is aged for a minimum of 12 months in a cellar under the cheese factory in a cave like environment. Each week the cheese must be routinely rubbed and turned. As the cheese gets older it develops a stronger flavour, it produces a crumbly textured farmhouse cheese with a sweet herbaceous aroma reminiscent of the season it was produced.
