Gorgonzola Dolce or “Sweet Gorgonzola” is characterized by it’s soft creamy texture and pale white pate with blue-green marbling. It has a delicate flavour which comes from a maturation of at least 50 days. Similar to champagne and sparkling white wine yeasts play a very important role throughout the entire production process of Gorgonzola. Their action confers a delicate sweet, mild flavour against an intense pink rind, which is typical of Gorgonzola.
